Garlic Scapes (1 quart)
Garlic scapes are the flowering part of the garlic plant. They are harvested in mid to late June to allow the plant to allocate more resources to the bulb. If left on the plant, the garlic will flower with purple flowers and develop garlic seeds which will grow into small undersized bulbs if left in the garden. Since they have such a short season, fans of garlic scapes grab them quickly. They can be pickled, or ground into a pesto, but they also can just be used as a garlicy seasoning in your day to day cooking.
